Trisodium citrate is a chemical compound with the molecular formula Na3C6H5O7. It is sometimes referred to simply as “sodium citrate”, though sodium citrate can refer to any of the three sodium salts of citric acid. It possesses a saline, mildly tart flavor, and is a mild alkali. It is white, odorless, and has a pH of 7.5-9.0.

Low toxicity, GRAS by FDA; may cause mild irritation to eyes, skin, and respiratory tract; avoid contact with strong oxidizers or acids. Generally recognized as safe (GRAS) by FDA for food use; handle with gloves and goggles; incompatible with metals, may corrode some surfaces; no significant fire hazard but use water spray or CO2 for fires; thermal decomposition can release irritating gases.
