PGPR, or Polyglycerol Polyricinoleate, is a polyglycerol ester of interesterified ricinoleic acid from castor oil, a low-HLB (3-4) emulsifier as a viscous yellow liquid, miscible in vegetable oils for reducing yield value in fat-based systems, as outlined in ChemicalBook emulsifier entries.

Optimizes chocolate rheology for molding; stabilizes water-in-oil emulsions in spreads; aids in confectionery fat crystallization; in bakery shortenings for aeration; and in industrial fats for anti-bloom agents in export-oriented production lines.

EFSA-approved with ADI of 7.5 mg/kg body weight; potential for digestive intolerance in sensitive consumers. Low irritancy but avoid heated vapors; implement food-grade hygiene with aprons during hot processing to prevent slips.

Poured into 180 kg food-approved mild steel drums with bung closures. Store in ambient temperature zones, labeled for traceability in supply chain audits.
