Disodium inosinate is a white powder with formula C10H11N4Na2O8P and molecular weight 388.15 g/mol. Density ~1.5 g/cm³, melting point >300°C, soluble in water, odorless; obtained by fermentation or synthesis, used as flavor enhancer.
