Sodium erythorbate, also known as sodium D-isoascorbate, is a white to off-white or yellow-white crystalline powder or granules with the formula C6H7NaO6 and molecular weight 198.11 g/mol. It is slightly salty, almost odorless, highly soluble in water (forming clear solutions), and stable under normal conditions but decomposes in light or heat. Derived from erythorbic acid, it acts as a stereoisomer of ascorbic acid and is produced via fermentation or synthesis.

Sodium Erythorbate

Primarily used as an antioxidant and preservative in food processing to prevent oxidation and discoloration in meats, fruits, and beverages; enhances color stability in cured meats and acts as a curing accelerator; in pharmaceuticals as a stabilizer; and in cosmetics for anti-aging formulations.

Low toxicity but may cause mild irritation to eyes, skin, and respiratory tract; avoid contact with strong oxidizers or acids. Generally recognized as safe (GRAS) by FDA for food use; handle with gloves and goggles. Incompatible with metals, may corrode some surfaces; no significant fire hazard but use water spray or CO2 for fires.

Typically packaged in 25kg cartons or fiber drums with polyethylene liners to prevent moisture; store in cool, dry, well-ventilated areas away from light and incompatibles.
