Sorbic Acid (CAS 110-44-1), also known as 2,4-hexadienoic acid, is a straight-chain dienoic acid supplied as a white or cream-white crystalline powder with a faint odor, used as a preservative in food, beverages, cosmetics and pharmaceuticals. Density 1.20 g/cm³, melting point 134°C; slightly soluble in water, soluble in organics. Has a faint odor; produced by condensing ketene with crotonaldehyde.
