Sorbic acid is a white crystalline powder with formula C6H8O2 and molecular weight 112.13 g/mol. Density 1.20 g/cm³, melting point 134°C; slightly soluble in water, soluble in organics. Has a faint odor; produced by condensing ketene with crotonaldehyde.
