Zeaxanthin is a naturally occurring xanthophyll carotenoid with formula C₄₀H₅₆O₂ and molecular weight 568.87 g/mol, supplied as a yellow crystalline solid ranging in colour from light orange to very dark red. Estimated density 0.9944 g/cm³, melting point 215.5 °C, estimated boiling point 572.66 °C.
A dihydroxy carotenoid of the β,β-carotene series (CAS 144-68-3; EC 205-636-4), zeaxanthin functions as a pigment and antioxidant ingredient used across food, nutraceutical, and feed applications. It is sparingly soluble in water and soluble in organic solvents and oils.
