Sodium metabisulfite, also known as sodium disulfite or pyrosulfite, is a white crystalline powder with formula Na2S2O5 and molecular weight 190.11 g/mol. It has a density of 1.48 g/cm³, decomposes above 150°C, and is highly soluble in water (up to 650 g/L at 20°C), releasing sulfur dioxide. With a pungent SO2 odor, it acts as a strong reducing agent and is produced by reacting sodium bisulfite with sulfur dioxide.
